Creamy Banana Chia Yogurt Parfait
Layers of vanilla chia pudding, honeyed Greek yogurt, banana, and crunchy granola — a make-ahead breakfast that balances protein, fiber, and healthy fats.
Prep Time: 10 minutes (+ at least 2 hours chilling)Servings: 4 parfaits
Ingredients
Chia Pudding
1 cup milk of choice (dairy or unsweetened almond milk)
¼ cup chia seeds
1 teaspoon vanilla extract
1 tablespoon maple syrup or honey (optional)
Pinch of cinnamon
Yogurt Layer
2 cups plain or vanilla Greek yogurt
1–2 tablespoons honey or maple syrup (optional, if using plain yogurt)
For the Parfaits
2 medium bananas, sliced
1 cup granola
¼ cup chopped walnuts
Extra cinnamon, optional
Instructions
1. Make the Chia Pudding
Whisk together the milk, chia seeds, vanilla, maple syrup, and cinnamon. Let sit for 10 minutes, stir again, then refrigerate for at least 2 hours or overnight until thickened.
2. Prepare the Yogurt
If using plain Greek yogurt, stir in honey or maple syrup to taste.
3. Assemble
Divide among four glasses in this order:
Granola
Banana slices
Greek yogurt
Chia pudding
More Greek yogurt
Banana slices
Sprinkle with walnuts
Finish with a little granola and cinnamon if desired
Serve immediately for maximum crunch, or refrigerate until ready to eat.
Meal Prep
For the best texture:
Prepare the chia pudding up to 5 days ahead.
Portion the yogurt and chia pudding into containers.
Store granola separately.
Slice bananas the morning of serving (or add just before eating to prevent browning).
Optional Protein Boost
If you'd like to make this even more filling:
Stir 1–2 tablespoons of peanut butter powder into the Greek yogurt before layering. It blends smoothly and adds protein without making the parfait heavy.
Or add ½ scoop vanilla protein powder to the yogurt. If it becomes too thick, stir in a splash of milk.
