Marry Me Chicken


Seared chicken breasts simmered in a creamy sun-dried tomato Parmesan sauce — rich, garlicky, and irresistible enough to earn its name.

Ingredients


For the Chicken

  • 4 boneless, skinless chicken breasts

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 2 tbsp olive oil


For the Sauce

  • 3 garlic cloves, minced

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup sun-dried tomatoes, chopped

  • 1/2 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1/4 tsp red pepper flakes

  • 1/4 cup fresh basil, chopped


Instructions


Season the chicken

Pat the chicken breasts dry and season both sides with salt, black pepper, and garlic powder.


Sear the chicken

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken 5-6 minutes per side until golden brown and cooked through. Remove and set aside.


Sauté the garlic

Lower heat to medium and add the minced garlic to the same skillet. Cook 30-60 seconds until fragrant, scraping up any browned bits.


Build the sauce

Pour in the chicken broth and heavy cream, then stir in the sun-dried tomatoes, Parmesan, Italian seasoning, and red pepper flakes. Bring to a gentle simmer.


Simmer until thickened

Let the sauce simmer 4-5 minutes, stirring occasionally, until slightly thickened.


Return the chicken

Nestle the chicken back into the skillet, spoon sauce over top, and simmer 3-4 minutes more until heated through.


Garnish and serve

Sprinkle with fresh basil and serve warm over pasta, rice, or mashed potatoes.


Notes

For extra depth, use the oil from the sun-dried tomato jar in place of plain olive oil for searing. Leftovers keep in the fridge for up to 3 days and reheat beautifully over low heat.
