The Oil Was Already Damaged Before You Bought It


There's something happening to cooking oil before it reaches you that almost nobody explains on the label. Once you know it, you'll read ingredient lists differently.


I'm not talking about a vague sense that vegetable oil is unhealthy. I'm talking about something specific — a process that happens in the factory, before the oil is ever used in a food product, that changes the fat at a molecular level. And then that damaged fat gets heated again. And again. By the time it reaches your cells, it's been through a lot.


What the extraction process actually does


Take a sunflower seed. Or a soybean. These are ordinary things that contain fat. To turn that fat into the clear, neutral-smelling oil in a bottle, manufacturers use a process that involves very high heat — often above 400 degrees — and a chemical solvent called hexane, which is a petroleum derivative.


The seed gets bathed in hexane to extract as much oil as possible. The solvent gets evaporated off. Then the oil is deodorized and bleached to remove the smell and color that high-heat processing creates. What you end up with looks perfectly fine in a bottle. Clear, neutral, shelf-stable for months.


But the process oxidizes the fat. Oxidation means the molecular structure has been altered by heat and chemical exposure. The fat is damaged — technically rancid — before it ever leaves the factory.


Then it gets used in a food product. Heated again. Shipped. Stored in a warehouse. Cooked in a restaurant fryer. Or heated in your kitchen. Each round of heat oxidizes it further.


When your body processes oxidized fat consistently, it triggers a chronic inflammatory response — not an acute one you'd notice as a distinct symptom, but a background condition that shows up as fatigue, joint stiffness, brain fog, a general sense of running at 70%. The kind of thing you adapt to and call normal. Chronic low-grade inflammation is also the common thread in heart disease, metabolic disease, and autoimmune conditions — not the result of any one factor, but something that accumulates over time.


This is in nearly everything ultra-processed. Crackers, salad dressings, protein bars, bread, chips, sauces. Check the ingredient list and you'll find canola, soybean, corn, sunflower, safflower, or the catch-all "vegetable oil" on almost everything in the middle of the grocery store.


What the "heart healthy" label is actually describing


Canola oil has been marketed as heart healthy for decades, and that designation came from a real place. Compared to saturated fat, canola oil's fatty acid profile — the ratio of omega-3 to omega-6 fats — looks favorable on paper.


The problem is that the comparison was made using the fat before processing. The "heart healthy" designation doesn't account for what high-heat solvent extraction does to those fats, or what happens when oxidized linoleic acid — the dominant fat in most seed oils — accumulates in LDL particles and contributes to arterial inflammation over time. Research on this has been building for years. It points in a direction that's the opposite of what the label implies.


The label is describing a fatty acid profile measured in isolation, before the oil went through the process that makes it shelf-stable and commercially viable. It isn't describing what that oil does after industrial extraction, repeated heating, and months in a clear plastic bottle on a warm shelf. Those aren't the same thing, and the label doesn't bridge that gap.


There's also a blending problem that's widespread and almost entirely unaddressed by US labeling rules. A product can legally say "made with olive oil" or "contains olive oil" while the dominant oil is canola or soybean. The label is technically accurate. The proportion isn't disclosed. This is legal, common, and not something most people know to look for. Check the full ingredient list, not just the front of the package.


Your olive oil might not be olive oil


This is the part I found most infuriating when I started paying attention.


Studies — including a well-known investigation out of UC Davis — have found that a significant percentage of olive oil sold in the US, including products labeled "extra virgin," is either blended with cheaper seed oils, made from lower quality olives than the label claims, or has degraded past the chemical standards for extra virgin classification by the time it reaches you.


That first category is the most common. A product can say "made with olive oil" while the dominant oil is canola or soybean. The label is accurate in the narrowest possible sense. The proportion doesn't have to be disclosed. What you're paying an olive oil price for may be mostly an industrial seed oil with a small amount of olive oil added for labeling purposes.


Even when the oil is genuinely olive oil, how it's stored matters more than most people realize.


Light degrades olive oil quickly. A clear plastic bottle on a brightly lit store shelf — which describes most of what's in a typical grocery store — is close to the worst possible storage. The polyphenols that make real extra virgin olive oil genuinely protective may already be largely gone by the time you buy it, even if the oil itself is real and unadulterated.


What to look for when buying olive oil: a dark glass bottle, because light breaks down the protective compounds. A harvest or crush date on the label rather than just a best-by date — oil that's sitting on a shelf for two years from harvest isn't the same product as fresh-pressed oil. A single origin or named producer, which is harder to adulterate than a blend from multiple countries. And for US-produced oils, the California Olive Oil Council seal is a meaningful indicator of quality.


This isn't a reason to give up on olive oil. It's a reason to buy it more carefully. The real thing, properly stored, is genuinely different from a degraded blend — and that difference is worth the extra few minutes of label reading.


The oil in most packaged food was damaged before it reached the factory that used it. That's not a scandal anyone is required to put on the label — which is exactly why it's worth knowing.
